Born and raised in Tijuana, Baja California, Chef Jotch started in the gastronomy industry at a very young age. He was born in a family who is passionate for cooking. It was his grandfather; founder of Guiseppis’ Pizza in 1969, who inspired him to learn about this culinary art at the family’s Italian and Mediterranean Restaurants. His uncle; the famed Chef Javier Plascencia, is who inspired him to work with the local flavors of Baja. To acquire experience, Chef Jotch worked his way at various restaurants in San Diego, California, Mexico City and San Sebastian, Spain. He then returned to Tijuana, with a clear vision – to cook with the flavors of Baja California with techniques and culinary inspirations from the rest of the world. His dream becomes true in his creation CREATO Pizza Bar in Tijuana where one is able to experience a very unique style, New York style pizzas with fresh local ingredients of the highest quality – such as their very own produced cheeses and freshly made pasta.
