Ethan Yang is the Executive Chef and Owner at Glass Box – a supersized glass-walled sushi restaurant perched atop Sky Deck at Del Mar Highlands Town Center in San Diego. He is also the Chief Operations Officer for MSG Hospitality – a boutique marketing agency in San Diego specializing in restaurants and hospitality brands. A third-generation chef, Ethan’s culinary journey began in his family’s kitchens at age seven, working alongside his father and learning the craft from the ground up.

The story behind Glass Box was to create a dining experience where guests could truly see the artistry behind their food. Too often, the preparation process is hidden in restaurants, and diners miss out on that connection with their chefs. The name reflects the restaurant’s unique design: a supersized glass-walled space that offers guests a front-row seat to the art of sushi making.

Glass Box’s menu draws inspiration from a variety of Asian cuisines, including Japanese, Chinese, Korean, and Taiwanese flavors. Each dish highlights the unique techniques, ingredients, and cooking styles of these regions. From the delicate precision of Japanese sushi and sashimi to the bold, comforting flavors of Chinese wok-fried dishes, every item on the menu is crafted with authenticity and creativity. Korean influences shine through in dishes that highlight rich marinades, fermented flavors, and signature spices, while Taiwanese cuisine brings an element of warmth and nostalgia with its soulful broths, braised meats, and street food-inspired bites.
