A native of Mexicali, Baja California, Chef Tomás Gastélum is part of a new generation of culinary talent helping shape the future of Baja cuisine. His cooking is rooted in the region’s exceptional ingredients, blending thoughtful technique with a deep respect for local products and traditions.
Gastélum began his career in some of Valle de Guadalupe’s most celebrated kitchens, including Malva and Animalón, before joining the acclaimed ARCA in Tulum. Rising to Head Chef, he helped guide the restaurant during its continued recognition among Latin America’s 50 Best Restaurants. He later refined his craft at the legendary Noma in Copenhagen, expanding his expertise in fermentation and preservation.
Today, Tomás Gastélum serves as Head Chef at Fireside at MIRA Earth Studios in Valle de Guadalupe. Alongside Executive Chef José Luis Hinostroza, he creates bold, ingredient-driven dishes that celebrate the flavors, products, and seasonal bounty of Baja California while offering a fresh perspective on the region’s evolving culinary identity.
