Abraham Gutiérrez
Abraham Gutiérrez Rojero was born in Ciudad Juárez, Chihuahua, Mexico. He holds a Bachelor’s Degree in Culinary Arts from Icon University in León, Guanajuato.
From an early age, he developed a deep interest in gastronomy, beginning his professional career in family-owned restaurants. At a young age, he took on responsibilities as a restaurant floor captain and later as a restaurant manager, developing a comprehensive understanding of cuisine, service, and hospitality.
Throughout his professional career, he worked at Restaurante Izote in Mexico City alongside renowned Mexican chef Patricia Quintana. He later joined Grupo Anderson in Cancún, Quintana Roo.
He complemented his education with foundational sommelier studies at OMSOM (Mexican Sommelier Organization), as well as various specialized sake courses in Mexico City. His interest in Japanese gastronomy has also led him to pursue specialized training in Tokyo, Japan, and Los Angeles, California.
Throughout his career, he has visited numerous restaurants across Mexico, from Ensenada to Yucatán, seeking to explore different expressions of Mexican cuisine and broaden his perspective on ingredients, technique, and hospitality.
He led a restaurant chain in León, Guanajuato, sharing his knowledge of cuisine and service while participating in the training and management of culinary teams.
He is currently based in Ensenada, Baja California, where he is the founder and director of Bocalobina, a restaurant specializing in ingredient-driven cuisine using Japanese techniques.
His culinary philosophy is rooted in respect for the ingredients found in the Ensenada region, particularly those sourced from the Mexican Pacific. Japanese techniques serve as a tool to enhance and preserve the natural characteristics of each ingredient, creating a dialogue between the products of Baja California, Japanese techniques, and Mexican culinary identity.
