Alex Torres

Alejandro Torres is the chef and co-owner, along with Fabiola Aceves, of Envero en el Valle, a restaurant they founded in 2019 in Valle de Guadalupe.

With experience in renowned kitchens in Mexico and abroad, Alejandro has developed a contemporary Mexican cuisine at Envero with an identity deeply rooted in Baja California, highlighting local ingredients, fire, the land, and a close relationship with local producers.

His work has led him to participate in important national and international culinary events, sharing the richness of Baja California’s culinary scene beyond its borders.

Today, Alejandro and his team continue to make Envero a culinary destination in Valle de Guadalupe, with a concept recognized by the MICHELIN Guide in 2024, 2025, and 2026, and as part of The 250 Best Restaurants in Mexico 2026.
