Brazilian-American Chef Quindere is the Co-Founder and Executive Chef of VALLE OMAKASE, located at Hotel Boutique & Spa Valle de Guadalupe.
Through his travels, Chef Quindere developed an early appreciation for Japanese cuisine, which became a major influence on his culinary style.
Chef Quindere has studied and worked in Tokyo; the Seychelles, Africa, at the Four Seasons Hotel; Hawaii; San Diego; and Miami. More recently, he served as a Consulting Chef for Cuixmala Hotel in Jalisco and for Oasis Restaurantes Group in Manzanillo, Mexico.
Throughout his career, Chef Quindere has had the opportunity to work alongside highly acclaimed chefs, including renowned figures such as Chef Nobu Matsuhisa in Miami; Michelin-starred Chef Jeff Ramsey, who earned his star in Tokyo, Japan; and Hawaiian celebrity Chef Alan Wong at the Waldorf Astoria on the island of Maui, among others.
Chef Quindere also spent time in Lima, Peru, studying the artistry of ceviche and Nikkei cuisine at Gastrotur Perú Culinary School. He also studied culinary arts at The Art Institute in San Diego, California.
Chef Quindere has a refined eye for detail and a strong foundation in classical culinary techniques. At the same time, he brings a bold, innovative approach to Japanese cuisine, creating distinctive and memorable dining experiences.
