With nearly 30 years of culinary expertise, Chef Bryn McArthur leads the kitchen at Amaya, the signature restaurant at Fairmont Grand Del Mar in San Diego. As Executive Chef, he brings a wealth of experience in luxury hospitality, refined technique, and a passion for seasonal, ingredient-driven cuisine.

Chef McArthur began his career in independent restaurants before transitioning to luxury hotels in 2005, including the Fairmont Hotel Vancouver and most recently The Savoy in London, where he served as Chef de Cuisine. Throughout his career, he has collaborated with esteemed chefs such as Chris Beal, Robert LeCrom, and Joseph Schafter, shaping his philosophy of elevated yet approachable fine dining.

Inspired by family traditions and early memories in the kitchen, Chef McArthur’s menus reflect both creativity and comfort, highlighting the vibrant flavors of Southern California and coastal cuisine. At Amaya, he crafts memorable dining experiences for guests seeking an elegant escape within the coastal canyon setting of Fairmont Grand Del Mar. Outside the kitchen, he enjoys exploring local markets, cycling through San Diego, cooking at home and spending time with his dog.
