Carlos Esquivel

Carlos Esquivel is a Mexican chef from Ensenada, Baja California, with more than 11 years of professional experience. Through his experience and leadership in various kitchens across the region, as well as the recognition of his career by the MICHELIN Guide Mexico since its first edition in 2024 and in subsequent years, he has built a personal culinary vision deeply connected to Baja California's products, technique, and the culinary richness of Mexico.

He is currently chef and co-owner of Esquivel Cocina Mexa, a restaurant where he develops a cuisine that connects the products and flavors of Baja California with the culinary traditions of different regions across Mexico. His approach honors the origin of ingredients and the memory of Mexican cooking, reinterpreting them from a contemporary perspective.
