Fishwater takes its name from fish sauce: salt’s funkier cousin and the backbone of so many Southeast Asian dishes.

It’s our love letter to Southeast Asia, told through the food we cook and the way we welcome people. It’s inspired by streets full of life, markets overflowing with fruit and herbs, and unforgettable meals from tiny stalls you may never find again. A small plastic chair, a little table, and someone proud to feed you.

Our cooking draws from the region’s many food traditions, bringing our own perspective to the flavors and dishes we love. We carry that same spirit into every meal: care in the cooking, generosity at the table, and an invitation to slow down, eat well, and feel at home.
