
Humberto Suarez Beto
Chef Humberto Suarez (Beto) grew up in Acapulco, Mexico, where the kitchen was always the heart of the home! Inspired by the bold, vibrant cooking of his mother and sisters, he developed a passion for food that led him to teach himself the craft from scratch.
He began his culinary journey at On The Border Mexican Grill & Cantina, where he quickly rose through the ranks to become kitchen manager—a role he held for nearly a decade. For the past nine years, he’s led the kitchen at The Blind Burro as Chef de Cuisine, where he thrives in the fast-paced energy of downtown San Diego. He loves that every day is different and welcomes the challenges that come with it.
While Mexican cuisine is his foundation, if he had to cook anything else, it would be fresh, handmade pasta—his go-to comfort food. His approach to cooking is built on bold, honest flavors and the belief that food should bring people together.
Suarez received 3rd place honors in 2024’s Chef of the Fest Competition at the San Diego Food + Wine Festival. He credits the support of his wife, children, and faith in God for keeping him grounded and motivated to keep learning, improving, and doing his best every day!
