Chef José Luis Hinostroza is an internationally recognized Mexican chef known for his ingredient-driven approach to contemporary Mexican cuisine and open-fire cooking. As Executive Chef and Culinary Partner at MIRA Earth Studios in Valle de Guadalupe, he leads the culinary vision behind Fireside, where Baja’s seasonal ingredients, regional flavors, and thoughtful technique take center stage.

Born in California and raised in a Mexican family, Hinostroza developed an early appreciation for agriculture and local ingredients that continues to shape his cooking today. His culinary journey includes training at some of the world’s most influential restaurants, including Alinea in Chicago, Maaemo in Norway, El Celler de Can Roca in Spain, and Noma in Copenhagen, before returning to Mexico to co-found the acclaimed ARCA in Tulum. Under his leadership, ARCA earned international recognition from The World’s 50 Best Restaurants, Latin America’s 50 Best Restaurants, and the Michelin Guide.

Today, Hinostroza brings that global perspective to Valle de Guadalupe, where his cuisine celebrates the landscapes, producers, and traditions of Baja California through bold, product-driven dishes that honor both place and season.
