Mercedes Tiggs is a Licensed Clinical Social Worker (LCSW), educator, consultant, professor, and social entrepreneur dedicated to advancing mental health, holistic healing, and community empowerment. A proud Former Foster Youth, Mercedes has transformed her lived experience into a powerful platform for advocacy, healing, and innovation in therapeutic practices, notably through her groundbreaking work in Culinary Therapy.
Mercedes earned her Bachelor of Science in Criminal Justice from San Diego State University and her Master of Social Work (MSW) from the University of Southern California, with a concentration in Community Organizing, Planning, and Administration. Her academic and professional journey reflects a deep commitment to systemic change and client-centered care. She currently serves as an Assistant Professor and Behavioral Health Counselor at Palomar College.
Mercedes is the founder and owner of Eight16 Culinary Therapy, a transformative wellness practice that blends mindful cooking, trauma-informed therapy, and holistic healing.
Through Eight16, she supports individuals and communities in their journey toward self-discovery, nourishment, and emotional resilience. Her work bridges the gap between mental health and everyday practices, offering participants a deeper understanding of how food, mindfulness, and community connection influence well-being. In recognition of her profound contributions, San Diego County Supervisor Monica Montgomery Steppe (4th District) presented an official proclamation declaring August 16 as “Eight16 Culinary Therapy Day” in San Diego County. This significant honor celebrates both the innovative impact of Eight16 and Mercedes’ leadership in reimagining healing spaces that are accessible, culturally responsive, and community centered.
Beyond the therapy room and classroom, Mercedes is a passionate advocate for social justice, mental health equity, and foster youth empowerment. Her personal and professional lives are rooted in compassion, service, and a belief in the power of healing through community and connection.
