Michelle Bui

Michelle Bui is the Executive Sous Chef at Moon Rabbit in Washington, D.C., where she works alongside Chefs Kevin Tien and Judy Beltrano to celebrate and evolve Vietnamese cuisine through thoughtful, seasonal cooking. Born and raised in the DMV, Michelle's culinary journey began in her family's kitchen, where Vietnamese flavors and traditions ignited her love of cooking, and has since been shaped by more than a decade in professional kitchens.

Michelle is passionate about building connections through food. Today, she is dedicated to strengthening relationships within the hospitality industry. Hoping to aid in fostering a vibrant community through collaboration and support of colleagues, and mentoring the next generation of cooks. Outside of the kitchen, Michelle enjoys unwinding with her Nintendo Switch—especially Stardew Valley—and jamming to a soundtrack that ranges from sad indie girl music to techno.
