
Miguel Bahena
Chefs Carolina Verdugo and Miguel Bahena, graduates of the Gastronomy program at the Autonomous University of Baja California, have built their careers within Baja California’s culinary scene, contributing to renowned projects such as Manzanilla, Deckman’s en el Mogor, and Silvestre.
In 2015, they founded Pacífico Restaurante, and in 2018, they brought Madre Restaurante to life—a project that embodies their current culinary vision: cuisine deeply rooted in the region, highlighting ingredients from both the sea and the land, seasonality, and the producers of Baja California, all approached with respect, technique, and creativity.
Through Madre, they have participated in numerous national and international culinary events, including activities associated with the UNESCO Creative Cities Network.
Since 2021, Madre has been featured in the Guía México Gastronómico by Culinaria Mexicana and has been recommended by the MICHELIN Guide for three consecutive years, from 2024 through 2026, further establishing it as a restaurant dedicated to expressing the identity and culinary diversity of Baja California from its home in Ensenada.
