Chef Eduardo Salgado embarked on his gastronomic journey at a young age, honing his skills at renowned establishments like Amaranta in Toluca and Casa de La Troje in Metepec. In 2015, he advanced his culinary education at the esteemed Culinary Institute of America in Hyde Park, NY, later undertaking professional training at Via Veneto in Barcelona. Eduardo’s professional career flourished in New York City, with prominent roles at David Chang’s Momofuku Noodle Bar, Masa Takayama’s Kappo Masa, and as a Sous Chef at Lola Taverna. By 2020, at just 23, Eduardo relocated to Ensenada, Baja California to lead the restaurant ‘Emat. Today, while steering ‘Emat to new culinary heights, Eduardo also shares his expertise as an instructor at the Culinary Arts School in Tijuana.
