Javier Plascencia was born in the border city of Tijuana, which gave him a bicultural life from an early age. He and his siblings grew up within the restaurant industry, his father, “Don Tana,” opened the first pizzeria in Baja California in 1967, called Giuseppis, fostering a love of cooking from his teenage years.
After working at several establishments in San Diego, CA, such as Fuddruckers and the Sheraton hotel, he studied Gastronomy at Mesa College. However, it was in 1989 when he truly developed as a creative chef while leading the restaurant Saverios. Since then, the renowned Grupo Plascencia, led by his father, “Don Tana,” along with his own projects, has become a culinary institution where quality and flavor are fundamental.
