Introducing Chef Juan Cabrera, the mastermind behind Casa Tijuana and the celebrated Fonda Fina in Mexico City. A graduate in Gastronomy from the University of the Cloister of Sor Juana and trained as a Pastry Chef at the Culinary Institute of America, New York, Chef Juan’s impressive resume includes stints at prestigious establishments like Pujol and TO under Grupo Enrique Olvera. He showcased his expertise on Top Chef Mexico 2017, securing a spot as a finalist, and was honored in the “Great Mexican Chefs” book by Larousse that same year.

Whether presenting gourmet Mexican cuisine at Casa Tijuana or earning accolades like being listed in La Liste 2019, France for Fonda Fina, Chef Juan remains an emblematic figure in the culinary world, blending traditional flavors with innovative flair.
