Maribel Aldaco, Mexican Pastry Chef. She began her formal training working in restaurants such as Martín Berasategui in Spain, Blue Hill at Stone Barns and The Nomad in New York and Quince in San Francisco.

Today, she is the executive pastry chef of the best restaurant in México and one of the 50 Best Restaurants in Latin America: Fauna in Bruma, Valle de Guadalupe. She is also the pastry chef of Bruma Wine Garden. In her own words: “We do native cuisine at constant transformation, for as we respect tradition, we never stop discovering flavors and updating in trends.”
